Jammy Vinaigrette

I had the spinach, celery, and Craisins for a tasty salad but no vinaigrette. And you can't just put ranch on that sort of salad. So I made this with homemade strawberry jam. It worked! I imagine any type of jam would work well.

Jammy Vinaigrette

1/4 C olive oil
1 Tb red wine vinegar
1-2 Tb jam

Nuke the jam in the microwave for 30 seconds or until it's warm enough to stir easily. Mix the olive oil and vinegar with the jam until combined (in a bowl with a fork is just fine). Add salt and pepper to taste. If you like more vinegar-y taste, add more. If you don't like the taste as much, try less. This makes enough for a salad for about 4 people. Make a double batch and save the rest if you think you might need it.

Wow! That sounds really good! Now I won't worry if I can't find that Brianna's vinaigrette!
