Parmesan Chicken


I got this recipe from Everyday Food and modified it just a little bit (they like bread crumbs, I like Ritz crackers). My kids love it!

Parmesan Chicken
Serves 4-6

2-4 Chicken Breasts, cut into tender-sized pieces
1/2 package Ritz Crackers
2 cup grated parmesan cheese, divided
1 1/2 cup grated mozzarella
2 Eggs
1 jar spaghetti sauce
Salt and Pepper

Crush Ritz crackers in a food processor or by hand. Add 1/2 cup parmesan cheese and salt and pepper. In separate bowl, whisk eggs until smooth. Preheat oven broiler. Dip chicken tenders in egg, then in crumb mixture, coating completely. Place on cookie sheet and broil 2-3 minutes each side, until crispy. Turn off broiler, preheat oven to 350. In 13X9 pan, pour about 1/4 spaghetti sauce. Place chicken tenders in sauce, cover with remaining sauce and top with mozzarella and remaining parmesan. Bake for 25-30 minutes, until cheese is melted.

Suggested sides: penne pasta and broccoli topped with more parmesan cheese!

I never thought to try ritz instead of breadcrumbs. That sounds tasty!

and thanks for the food pic! i've been meaning to do that, but I remember AFTER we've eaten everything...

This was delicious! Our favorite spaghetti sauce is Bertolli olive oil and garlic (cheap at Sam's). I only had one egg to use, but it turned out to be enough to coat two huge chicken breasts. The Ritz make it rich and yummy.
